FROM MUDDY PONDS TO PREMIUM SNACKS: THE MAKHANA STORY

Imagine starting with a muddy pond, thorny plants and a handful of seeds. That is where the makhana journey begins. Farmers prepare shallow water fields, sow seeds and wait months. By August, the real struggle starts. Workers enter thorn-filled water, collect seeds manually from the bottom and clean them one by one. Then comes the transformation. The black seeds are dried, graded, roasted and finally struck with wooden hammers. One by one, they burst into the white, crunchy makhana we see on supermarket shelves. But the bigger story is not just production. It is premiumisation. For generations, makhana was largely sold loose in local markets. Around 2017–18, modern branding, flavours and packaging started changing its image. A traditional food gradually became a modern “healthy snacking” product. The result? The average domestic price reportedly moved from roughly ₹500/kg in 2020 to around ₹1,250/kg in 2025. That means the opportunity is not simply about selling MORE makhana. It is about selling better-graded, flavoured, packaged and branded makhana.
